Happy St. Patrick’s Day, everybody!

This holiday is always a BIG deal in Massachusetts and for the first time in a long time- I’m in the city for it! I’m working, but regardless- I’m here!avocadoTruth be told though, St. Patrick’s Day has never really been than huge with me and my family (don’t take away my MA state ID!). Sure, we’re just as Irish as the next Greater Boston Area family, but my sister’s birthday is March 15 so that sort of trumped any significance that St. Patrick’s Day held in my life.mintBUT because I’m in Boston and Irish- I had to eat something green today.

(I already have the look down with a green Boston shirt and four leaf clover beads from when I celebrated St. Patrick’s Day in Baton Rouge with my BFF Kate)

This smoothie was my way of honoring the day:

Ingredients

  • 1.5 cups light coconut milk
  • Handful of fresh mint
  • Handful of fresh spinach
  • Ripe banana (chilled overnight or frozen)
  • 1/2 an avocado
  • 1 tbs. grass-fed collagen (optional)
  • 1 tsp. honey (optional)
  • Pinch of sea salt
  • Pinch of cinnamon

ingredientsBlend all together and reap the benefits of the luck of the Irish! The smoothie isn’t all that sweet so feel free to add more sweetener if you’d like. Or just use an even riper banana 😉
